Ambrosia Salad
1 small box Lemon Jell-O
1/2 can coconut
1 Large can fruit cocktail
1 c. chopped pecans
2 Tbsp. mayonnaise
Grated rind and juice of 1 lemon & 1 orange
Dissolve Jell-O in 1 cup hot water. Drain fruit cocktail, reserving 2/3 cup juice. To
Jell-O add orange and lemon juice and rind, and cocktail juice.
Partially congeal. then add cocktail fruit, coconut, mayonnaise and
pecan. Congeal completely.
