| Pecan Chicken Salad |
3 c. cubed cooked chicken
1 cup diced celery
1/2 c. grated carrots
1/4 c. flaked coconut
1/4 c. heavy cream, whipped
1/2 c. mayonnaise or salad dressing
1/2 tsp. salt
1/2 c. chopped pecans
In large bowl, combine chicken, celery, carrots, and coconut. Chill.
Blend whipped cream, mayonnaise, and salt in a small bowl; add to
chicken mixture and toss to mix evenly. Add pecans and toss lightly.
