Pecan Chicken
4 large skinless & boneless chicken breast
1/2 cup buttermilk
2 cups pecans ground salt & pepper to taste
1/4 cup Dijon Mustard

Pound chicken between wax paper until 1/2 inch thick. Combine buttermilk, mustard, and salt & pepper. Place chicken in this mixture until ready to cook, (can be overnight). shake off excess mixture and coat in ground pecans. Place on cookie sheet and bake at 375 degrees for 12 to 15 minutes.
